If you want more acceleration then go with the -1/+2. I wouldn't worry about top end. You said you don't like to ride over 100mph so it will not really effect you at all. While cruising down the highway you will be at a slightly higher rpm so like 7500-8000 instead of 7000 but that is not that big of a deal. If you go down a tooth remember that your speedo will be off so you will need a speedohealer or something like it to correct it.
