Jeezum Crow, Ten...you ain't messin about, brudda! If you need a roomie some day, let me know [sm=smiley30.gif]. You talk about using sharp cheddar for the bacon poppers. I have found that when you are cooking or baking, you need to use a sharp cheddar cheese. For example, if you make homemade mac and cheese (another easy recipe), if you use a mild or medium cheddar, you will not get the cheese flavor. It will taste like roux...or nothing at all. Sharp cheddar is the only option...
haha....thanks man. I've been cookin for quite a while. It's something that relaxes me. And its fun once you get the hang of it. You are right about the sharp cheddar....and especiallywith those jalepeno poppers. The taste of the cheddar with the spicy jalapeno... SMACK!! damn good. Thecream cheese was pretty damn good also.

Since thanksgiving is coming up...heres ya one I make every once in a while. It's a crowd pleaser....

Pecan and Bourbon Sweet Potatoes

3-4 large sweet potatoes
2 tablespoons butter
1 cup chopped pecans
1/2 cup brown sugar
1/2 cup Jim Beam Kentucky bourbon whiskey
Marshmallow, if desired

Cook several sweet potatoes as you normally would (microwave works great). Peel, place in large pot and mash. Set aside.

In a sauce pan heat up butter; add pecans and brown sugar. Heat and cook until a nice "syrup" is made. Add JIM BEAM and cook down several minutes to cook off alcohol and mix with the pecan blend.

Take a swig...

Add pecan/bourbon mixture to sweet potatoes and stir up well. Continue mashing until you reach the consistency you desire.

[font="times new roman"]For an extra twist or holiday treat, turn this dish into a sweet potato casserole by placing the potato mixture into a casserole dish and putting a layer of marshmallows on top. Place in 350° oven and bak
