Can I fit a 180 tyre to my 600 F2?

That is an F3 rim on there, common upgrade for the F2.
My F3 handles better with a 180 (also a racetec) jacks the rear up so it turns quicker and is more stable. I'm not sure any 180 would work but superstock tires like these have a pointy profile and are not much wider than a normal 170.
