Clutch swap issue, help appreciated

I am fairly new to my F1, but not new to bikes. After the riding season ended, I decided that it was time for a new clutch in my 89 F1 with 29k miles. I could feel it slipping and purchased an EBC aftermarket kit (new friction plates only, not new metal plates). I also invested in some new springs, because the old springs were not quite to specifications. I have a clymer manual and followed the procedure down to the letter, I am sure ALL necessary parts are back where they are supposed to be. Problem is that when I go to start the bike, it starts fine in neutral but when I go to shift into gear, the bike jumps and stalls. It feels to me like the plates are obviously sticking together. I let the bike warm up for quite a while and the issue persisted. If anyone has ANY information on a possible diagnosis to this issue, it would be much appreciated! I can elaborate on any part if need be, and provide details.
We'll get the obvious stuff out of the way first.
Did you soak the friction plates in oil for about 12 hours prior to installation?
Are you sure the clutch cable is adjusted/connected correctly?
Are you sure you installed the steels the right way? It DOES make a difference.

I soaked the plates for about 2 days actually, so I don't think that is it.
I did torque the retention nut, but I did not use the honda "clutch holder" I just used the rear brake like we all do.
I am not sure if the steel plates are installed correctly (did not state proper way in clymer manual) so that may be it...
