Seems you have an aftermarket exhaust on your ride. I would definitely re-jet when installing a K&N filter. I did and notice a big different on the way the bike pulled, throttle response, and even a different tone to my exhaust (seems like it had more bass if that makes any sense). I used a Dyno Jet kit and it was super easy to install (I'm pretty mechanically inclined and it was the first time I ever installed a jet kit).

Confused about this jetting as I'm still new to the bike scene and want to get a exhaust and k&n filter. Wondering what it is exactly...Sorry for the nub questions.

It is older carbed, not fuel injected bikes that have the jets in the carbs for the fuel to flow into the cylinders when you twist the throttle. Certain mods on certain bike require more fuel thus rejetting is necessary. You having an 07 600RR you are fuel injected.

Mine has a K&N 1 piece filter, stock can that has been cut open and gutted with only the perforated plated at the front left. It runs a little rich but performance is ok for now. I don't know what jets I have and don't know what engine mods may have been done by the previous owner so for now keeping it like it is.
