Default Prepping for a long ride

I'm preparing to do a week long ride with my roommate. He'll be on a Triumph Speed Triple and I'll be on Ginger, my CBR 600. I don't have any fears of comfort as I already know we plan to make a lot of scenic stops and rest stops. But my question is on how to pack.

I'm looking for some packs to thrown on that can hold enough clothing and what not for a week. I was looking at the Kriega packs but was wondering if any of you had suggestions or experience with others?

This is how we pack when we're leaving for 2 weeks. The soft saddle bags and a duffle (sea bag) on the back. Could probably leave off the duffle bag if only going for a week. The saddle bags can be expanded about an extra inch. They expand similar to the way many suitcases do now, with a zipper. The saddle bags are made by Cortech and called the Sport.
