Don't use Engine Ice, it is propylene-glycol and has only 1/2 thermal-conductivity of normal coolant, so bike will run hotter because less heat per second will be shed by radiator.
Use distilled water + Water Wetter for fastest heat-shedding rate. Will lower temps 10-15 degrees cooler than what you're seeing now.
I'm in Phoenix too and only see those temps you have when it's 110F out.

I think OP's temp spike could be a simple air pocket in the system.

Also give your throttle a little choke and up rev in between gears make sure you have a nice pulsing idle in slow riding you have injectors that run under 4,000 rpms and the bike Will go above 200 when hot out side and the more you use the engine the more it will use your coolant sysytem. Especially with custom exhaust on those. Im on my second fuel pump assembly and gasket on mine.
