Chain and Sprocket Suggestions

You need to make sure your chain and sprockets are the same pitch. 525 is a typical stock size. A common size for aftermarket kits is 520. Either is fine -- you wouldn't notice the weight savings advantages on a street bike.
Typically chains and sprockets are swapped at the same time, unless you do something crazy and wear one out prematurely from the other.
I've run Driven sprockets and RK chains. I've heard EK chains are good, too, depending on which ones (some of the cheaper colored ones I'd stay away from). I know Vortex makes sprockets as well.
