Regarding the LicPlate light wires... since they're not powering a light right now (it's been removed), I presume I won't be able to use this wire as my switch in the relay?

If you don't have the LP plugged in thats fine. The wire will be back there somewhere. I don't have a wiring diagram so I don't know what color it is. One you find it, connect the loose end to the relay, and ground the other relay terminal.
