You really can do it without taking any fairings off. You just need to take off the splash guard behind the front wheel to get to the filter, and the drain plug is on the left rear of the motor.

I usually take off my left and right fairings for easier access to the drain plug and the filter. Its alot easier to use my oil filter wrench when the right fairing is off. I also use a new drain bolt washer every time i change my oil. Its probably not a huge deal if you re-use the old one, but why not use a new one?

I like to pull off the lower plastics so that I can inspect the bike for things such as leaks. I have found such things as loose clamps on radiator hoses to oil slicks on the back side of the fairings from a gasket failing. It wouldn't hurt to pull the lowers off and just have a look around to make sure nothing will cause a problem later on down the road.
