You really should start doing track days. You think your having fun now, just wait.

Also about how long until your bike is at operating temp? Mine never gets above half on gauge.
1/3 of the gauge is fully warmed up. This is normally were it sits when cruising down the highway.
1/2 is where the fan will kick on. Sitting at a dead stop in traffic on a hot day, it might go to about 2/3.
If it ever gets near the top white hash line near the red zone, then you've got issues.
If it reaches the top of the red, just park it on the side of the road with a 'Free' sign on it.

+1 on track days too! You think you're fast and know how to ride... Then you show up to track and realize you don't know jack and have lots to learn

Ok guys so she's been running pretty good. I can hold speed, accelerate, and decelerate with minimal popping( marking it off as muffler).
The problem I'm having is if I'm cruising along and gently roll off throttle to slow crusing speed she starts to gurgle, not like a popping. If I roll on throttle ever so slightly it stops, but I speed up.
Wanted to get thoughts before I take out the last shim. As I said she runs pretty good ( I can deal with it as is) but I just feel like I can get it to be smoother.

Also need thoughts on air filter. K&n or stick with paper. TIA

Short answers.
1. gurgling on decel is probably idle mixtures too rich or too lean.
1a. make sure you don't have any exhaust leaks, can sound like gurgling.
2. Stock air filter.
