SeanPMN, I think you might just have a broken, bent, or stuck choke return spring/plungers. The mechanism is incredibly simple. No vacuum business, no electricity. As mentioned above, there's just a cable, some springs, and a plunger in each carb to meter the fuel. That's it. When you get the airbox off like johnnyx said, it should be pretty obvious. If necessary, post pics and I'll tell you what's broken. I have taken it completely apart about 3 times, and have had the carbs off as an assembly a few more times than that. I know what to look for. It could also just be that the slider pins that guide the large choke silder have goo all over them, and the normal vibration of the engine is such that it just kinda ratchets itslef open. Could just be a WD-40 fix...

i get what a choke does JJ, what i dont get is that the choke lever rises. on my 93 900 RR the choke wont stay on , it slowly starts to close on its own, ive never seen the opposite...i have seen the plungers in rough shape, however the slide actually worked but a little stiffer...i agree tho, it wont take 20 min. to get thwe tank and airbox off for inspection, all the jawjackin in the world wont replace hands on ...
