Well, the choke line runs from the switch to the top of the carb unit. Open up the LH housing, and take off your tank and airbox, and see if you can figure out anything obvious while wiggling it. Beyond that, the choke manifold has a spring that holds it shut, but you're gonna have to remove the carbs to get to it. Honestly, it sounds to me like the spring is missing or broken, and the engine vibration is causing the manifold to jiggle open. The manifold opening would drag the choke cable with it, and thus make the lever move on its own.

He means he starts with the choke off, and it slowly turns itself on, thus throwing too much air in the mix and killing the bike.
