In gear or in neutral

In gear or in neutral
Hello everyone. I have decided to do the clutch work on my 1996 900rrby myself. After viewing some how to videos I decided that the job is easy enough for me to handle. Just would like to know if the bike has to be in gear or in neutral or it really doesn't matter? Also, are the friction plates that cheap? I'm getting all 9 for $8.55, I just thought they would be a little more expensive than that.
Please let me know.
Thanks
