To truly know if the rotors are warped, you generally need a dial indicator with a magnetic mount. Then you can actually see how much deflection the rotor has in it. At least this is how we check them in the automotive world. Would seem the same for a bike, but I could be wrong.
I put on the EBC rotors and have been really happy with them. The only thing is I used their HH pads and are unhappy with them for street use. They glazed the rotors. After checking around, I will just be going to stock pads and deglazing the rotors.
If you are going as far as replacing the rotors, I would also recommend doing the SS brake line upgrade too. Very nice change.
