Both top speed and acceleration cannot both be gained with gear changes. To gain one, you lose in the other. Stock gearing is a fairly even compromise of both. If you change that, your gains and losses are your decision. For sure use ern's link to play with the numbers so you get what you want the first time.
Here's basicly how it works:
Up in front and/or down in rear yields more top speed, lower rpm, and better mpg but at a cost of torque and acceleration.
Down in front and/or up in rear gives more torque, quicker acceleration, and higher rpms for cruising, and lower mpgs, and is a very popular way to go.
Either way, if your speedo is electronicly picked up, it will not be accurate without a speedo healer.
