add back fluids. if possible, pressurize the oil passages so that everything is lubed before turning over.
turn the engine by hand to see if everything moves, pistons are not rusted into the bores, etc. remove spark plugs and spray in some wd-40 into the cylinders to get them lubed. once the engine starts up, it will all burn away, so don't worry about the smell and smoke.
should be okay.
on the carbs, you may need to clean them of any old gas or gummy buildup in the passages.
