Orem is on the west side of a mountain range just south of Salt Lake City. If you drive west its faily level for a bit and usually clear sailing, East is a mountain pass. I worked there one fall. 30 degrees C in Orem and I decided to explore the mountains one Saturday. Got stuck on a park road in a snow flurry still wearing short pants. Didn't drive east of Orem the rest of my visit.
Your V&H header will make the bike use more fuel due to the design of the header and the open can is no help for MPG. The V&H is a performance pipe. To make power you need to uses fuel.
160 miles on a tank is normal for a bike w/o mods. I get about 180 with mixed riding before going to reserve. I get 50 mpg over the road but have gotten as low as 32 mpg on spirited runs. Sounds like yours is OK.
Shifting at say around 4,500 to 5,500 rpm will gain you better mileage but the pipe is designed to run with a good solid twist of the right hand.

than stock because of the bigger cog up front

Like Jeff said, it's not going to make a difference unless you do a lot of higher speed/highway cruising. 6th gear on backroads and stuff is almost too much (imo).
I would stay at stock gearing. I like a few teeth up in the rear, but it's just a personal preference. I generally get about 36mpg avg and rip on her too much.
