Thanks for your replies. Just to clarify...
The tyre has a few thousand miles on it.
I use it for London commuting, 35 miles a day, ten miles fast riding but the rest through traffic, through one-way systems etc.
It began to feel skittish about 150 miles ago and is now scary.
Like my last BT021 front tyre it seems to have cupped all the way round on both sides.
Where the cupping is the rubber is really rough.
The centre of the tyre is slightly flat but tread in the middle is good.
Please see my drawing for a cross-section (slightly exaggerated).
Think I'm going to leave Bridgestone and try something else.

What PSI were you running in the tire? I have a hard time believing this issue is with the Stones....and I'm generally a Pirelli guy!

Another few thoughts , is your front wheel alignment correct ? (inrelation to the rear)
Are the front bearings kaput ? Are the forks themselves slightly out
of alignment as in not dead "square" / "parrallel" to each other ??

All issues than can produce the ride and wear issues you mention.

But as I may have mentioned or alluded to previously , when my forks
were leaking .... cupping of my front tire came about fairly quickly and
the ride was best described as being totally squirrely ! and had that
very unplanted feeling up front as with cupping of the tire in my opinion
make it (the tire) become unbalanced !

Hey:

out of balanced front tire, out of alignment rear wheel, loose steering stem, uneven fork fluid, or bent wheel, all can give this symptom or cause the tire to wear quickly and cup. please check all of these 1st before new tires or you will be buying another new set before you should be.
From my experience Michelins, Metzelers, Avons and Contis all wear and perform well in the UK weather. Also if your on a budget Shinkos work well and last very good, wet or dry but not as good as the other 4 mentioned. I have had poor luck with Bridgestones and Dunlops over time as they both used to be my preference in the UK, but they would wear funny and not the most fun in the rain. After leaving the UK and Europe to move to the US in the Carolinas I have steered clear of them as they tend to dry rot more so than the others when in stowage for me.

I would have some serious thought at getting at the problem of what's causing the tire to wear like that and get it fixed before you get hurt .
I wouldn't even ride a bike doing that ,, wow,, scary stuff there.
I don't even think Steve-o would ride a bike doing that on jack-*** (the movie) ,, then again ,, I think he would . LOL! But he makes big bucks doing crazy stuff. LOL!! Be Careful hmm.

Thanks for all the suggestions folks.
I replaced the bearings a year or two ago, the forks and general ride felt OK (until last week), the tyre was running at 36psi. Today I had a pair of Michelin Pilot Road 2s fitted and the bike now feels fine again. I can ride no-hands at 30, 40, 50, 60mph without a wobble.
I might get round to overhauling the forks soon but in the meantime (after 20 miles on the new rubber) she rides fine once again.

PRII's are good tires. Hopefully they work out for you.

36PSI is a good pressure for those also.
