Well you are going to have some issue here if you did not have the Engine, frame, and vin number recorded earlier. The Frame and Vin should match. Frame code is stamped on steering head right side. The engine code is under the shock on the back of the block. From what I understand there is a threshold for your year so you can find out that way. But the block number is not the same as the Vin number, but I heard that if they share similiar ending 6 digits that means they were made close to each other which probably means its the engine that came with it. Because these parts are stamped out and picked up at various times to assemble. Like my last 6 on the vin is 303157 and my engine one is 306133 Because the PC35E is the begining on the engine and obviously the JH2PC350 is the start on the vin. The last 6 designate production run. If they are close you are probably in good shape. Make sure the vin matches the head, and the block is close in sequence. I dont think any of these are numbers matching regarding the block to the vin. There is another one on the throttle body but I dont know its layout. Hope this helps
But you can get at least the year it was made by deciphering tthe codes on the engine as well.
For example in 2001 Engine codes were PC35E-2200001 and in 2002 they were PC35E-2300001. Not sure what year you have but that will tell you if it was at least made in the same year. So same year sequence and close matching production run numbers and you are probably good to go. Anything other and the motor was swapped at some point. Cheers

I would find it extremely unlikely that a shop would do that, because they simply would not stay in business long if they did that.
What I do think though, is that I would not trust a shop who wasted my time for five months.
Go in, take your bike, and take it somewhere that are willing to actually fix it in a timely manner.
