how do you remove the tank w/out dumping gas over the motor?

Turn the petcock to the off position and then run the bike till it stalls out due to lack of gas. Lines will be empty and tank won't drain anymore fuel.

the F4i doesn't have a petcock

I syphon out as much gas as possible and then pop a bucket under the line when I disconnect, it gets messy sometimes but nothing major

I bought a cheap siphon pump and just pump out all of the gas before removing the tank.

i believe its becase they are injected. no worry to flood the injectors as opposed to carbs. my petcock doesnt work so i normally drain it or just use a pair of plyers to crimp the fuel line and remove the tank, however this is where a 6 gallon gas can comes in handy.
