Sorry to hear about your bike. I've been through it, so I know how it feels, it sucks. But don't count it out, you could get it back. I did, and with very little damage. I don't think your insurance (assuming you have comprehensive coverage) is going to do anything for 30 days anyway. They want to give the police a chance to find it. Remember, thieves are stupid.
If you don't end up getting it back, and you have to replace it, I'd go for the one you like the most. The one that you think handles the best, or you're more comfortable on. The one that makes you feel the best to be seen on, whatever makes you happy. People can talk about specifications and performance numbers all day long. How many time have we all see the "slower" vehicle beat the "faster" one ?
In the end, it's all about you and what you want ?
