I was thinking that maybe the return to throttle was kinda slow. Maybe it' just me.

Does drop a tad slow.

Usual causes:
Poor carb sync
Crap gas (and even 10% ethanol may do this on finicky engines)
Lean mixture / Overall carb adjustment (slow jet clogged / idle (pilot jet) dirty or clogged / idle air mixture set too lean

Other things to look at would be the throttle mechanism itself.

Are the cables routed correctly/not pinched/properly lubed.

Does the throttle mechanism snap back nice nice and sharp? If the handlebar end weight is over tightened it can snag on the grip.

One thing that will help is to video the bike at idle and zoom in on the tach. Don't rev it. Just let it sit and idle. Show that as it reveals as much as the other.

Here is a video of it idling and I also have the motion pro carb sync hooked up to it. The pilot screws are set at 3 1/4 out.

That looks good and steady, both on the tach and sync guages. Both throttle cables have good tension? With the engine off, if you manually open the butterfly valves all the way, do they snap back quickly?

I bought new throttle cables and installed the pull cable. But couldn' get the push cable installed. I tried putting it on the throttle pulley housing first then putting it on the carburetor throttle cam. And tried the other way around. It's seems like it's not long enough. Is there something I'm missing? And I have the right one I compared the old one next to it. Idk. But it still seems to snap back without it. But I would like to get the push cable installed.

You need that cable on brother. Partly for safety, and partly for proper throttle response.
