Hey I know that this question has already been asked before but I am honestly a little to lazy to try and backtrack the answer.
Can the bike efficiently run off of just water and water wetter? Or does the system HAVE to have antifreeze or coolant in it?

I'll agree. Regular coolant is glycol based, which makes it slick thus lubricates the water pump (place disagreement here) and which along with the pressurization in the system, raises the boiling point. Water Wetter is not glycol based, thus it's primarily used in racing applications where if some spills on the track, it won't be as slick. The manual (all praise the service manual; amen) also states to use glycol.
Water has the best heat transfer properties, but it has none of the protection/anti-corrosion properties. Also does not help that the fan does not kick in until 215+ degrees... at the point the water is already boiling!
