Pump plunger does stop with back-pressure from carbs. Such as when float-valves closes.

1. next time it dies, close petcock. Then drain petrol from each carb-bowl and measure their volumes. What is volume in each bowl?

2. To eliminate tank, petcock, pump & filtre from equation, connect fuel-bottle directly to carbs to test (like IV drip)

- IF engine runs better, then we can confirm fuel-delivery to carbs is issue
- IF engine does not run better, then issue is with carbs.

Dannoxyz,

Thanks again for the support here!
I have now rebuilt the fuel pump with new parts as the old points were warn out, and now the pump is working better and I have no issues with flow anymore, but the engine was still not running perfectly. Just found out that someone had added dirty fuel by mistake and that the contamination was diesel and something else. The gas station has admitted that they delivered bad fuel. I had to clean the tank again, this time I dismantled everything that has been in proximity to the bad fuel, cleaned everything very carefully and replaced the fuel filter. The contamination in the fuel (diesel ?) destroyed my spark plugs in such way that they did not give a normal spark anymore and I thought for a second that I had major issues with the ignition system. I have not seen such behavior before and I learned something :-). The fuel tank also has a "pocket" where old fuel or heavier contaminations can hide and do harm when splashing into the main fuel stream during operation.
I have attached a picture of the diesel damaged spark plug that was behaving erratically, see the new plug (5km) with odd spark in the tester.
So the bike is running smoothly now! The good thing here is that I found many small issues like bad wiring, filters etc that could have become bigger issues soon. With new fuel clean parts and new spark plugs I now have my dream bike back o track again! Thanks a lot to all of you who helped !

Strange spark profile due to contamination
