They are Shims under buckets. Download or buy the factory service manual. The complete procedure is there and quite easy, just a little time consuming. Do it a few times and it becomes no big deal.

Definitely the service manual is a must! it is time consuming. I had I think 28,000 miles on my 2000 f4 when i did mine and ran in to some problems. my #1 journal was scored and I ended up replacing my head, i think somewhere you can read my posts with the problems I had. Anyway, this is a good time to change your coolant fluid if you havent already and clean and adjust your carbs since your going to have them off. taking the carbs off was a pain in the a..! but once you get them off it is easy. Follow the manual and you will not have any problems and if you do run into problems ask, youll get your answers in this site. it is time consuming but easy and well worth knowing they are in spec.

shims under bucket, check clearences write down on paper what they are for each valve, mic out each shim for each valve, you can get away with using old shims sometimes... I have to do it on my f4i soon, 42k on the orig engine...
