Lost power while on the freeway!

I was riding to work and I got on the freeway, this is my 3rd time on the freeway and I lost power this time. I was in about 4th gear and at 9-10 rpm when the bike started to slowly go down in rpm. It went down to like 6-7 rpm when I decided to pull over and then when I did the bike died. I tried starting her up but it didn't. So I waited and turned the choke full open and it fired right up. I rode off and it was riding great. What happened the caused my loss of power? Was my shifting wrong?

I have been having a similar problem like once a week for the past two months...
I ride a *ton* (like 70-80 mi./day), and every once in a couple weeks, I'll start to lose power (like I'm running out of gas), I'll pull over to the shoulder, wait a minute or two, put on the choke, and it fires right up like there was never a problem! Then it'll run immaculately for a week or two, then happen again.
There's no gas smell on mine, and no mechanic I've taken it to can figure it out (especially since it's so unpredictable and infrequent!!).
Any thoughts?
