Default Engine bogging when cracking trottle.

Bike was stripped to frame for powder coating. Carbs were sent for jetting, stage 1. all back in one piece. starts fine, idles fine, revs fine in lower gears. sometimes when cracking throttle wide open, not rolling it gradually, it peaks quickly then bogs out before catching again. any suggestions?

wide open throttle = jets.
aka " main jets "

To elaborate, you can't really "send" your carbs for jetting. They must be tuned on the bike, because each engine and combination of mods and elevation and normal temperature, etc is different. Check out:

Like spicy said, I think your current problem is main jets that are too big., making it run too rich at WOT.

The jets are to big.

I installed a Factory Pro Race jet kit in my F3 not to long ago. According to the info from them, I needed to install 145 jets. Only to have it do the same thing that yours is doing right now. Changed out to 142 and problem solved. A easy way to find out is look at your spark plugs. Doing some research, I found out that F3s like to run better alittle lean.

Yes they do, it was done to pass emissions in many places.

I also found that after installing 145/142 as recommended by the Factory pro sheet for my configuration (K&N Filter, D&D pipe) that I had to move down to 142/140. It was really bogging down at full throttle to the point that the bike was un-ridable with the 145/142 in.

Where was the needle set at? You can lean down the mixture or fatten the mixture by lowering and a raising the needles. This will not have as large as an effect as placing larger and smaller jets. Sometimes there is a need to fatten or lean out the high speed mixture just a smudge, so just shimming/removing shims the stock needles or adjusting the e-clips on aftermarket needles can make the finer adjustments with carb tuning.
