Safe Crusing RPM?

There is no way in hell you're re-geared AND peaking out at 157mph. The bikes top speed with stock gearing is 150mph, which given a 5% speedo-error would amount to 157.5mph indicated at top speed. Adjusting your gearing will reduce this top speed, so if the gearing is even at all off from stock, you wouldn't be getting those numbers.
I've been as close as I care to get to topping out, and I hit an indicated 145 at 12k RPM, and again the gauges are off. I'm also +2 in the rear.

I actually pulled the covers and counted the gears. I have 14 front and 45 rear (-2 +0). According to the Gearing Commander this setup combined with the 13,500 RPM ignition cut gives a road speed of 151.4 MPH at redline with stock tires sizes (I have stock size BT-016's), my 157 was what I thought I saw when glancing at the speedo going that fast (didn't take the time to carefully read it).
Also according to the Gearing Commander a stock F2 is geared to top out at 173.1 MPH at 13,500 RPM in 6th. Are you stopping your calculation of top speed prior to the rev limiter? If so that is your problem, you are not accounting for all of the available RPM's. As a side not if we calculate using the top mark on the Tach, 16,000 RPM, Stock top speed moves up to 205.1 and my -2 +0 moves to 179.5.

I can not account for the throttle position of the R6, but I can say his shift light lit on at least one shift. I know this because I saw it light up and thought "Does that thing have a shift light?", so I asked him and he said it was. His gearing and shift points are taller, ****ing from 1st at a claimed 80 MPH by him, granted his tach shows 16,000 RPM prior to redline.

It'll be a cold day in hell when a F2 does 170 mph! The stock gearing by the way is 15 - 43. You're running a standard -1 +2 conversion

Top speed - Mid 150's. Stock gearing.
Let's not forget you can't go past redline. Revlimiter stops you there cold.

I am not going to dispute your experience / knoledge in this area. The top speed i mentioned was from a *QUICK* glance at the speedo, and I could have easily mis-read it. As far as out running the R6 I pulled 2 seperate R6's (both looked the same so I am assuming they were similar years). I talked with the owner / rider of the second and the first would not talk to me. The second said he was very impressed with how quick the F2 was and that he could not keep up when cruising at 25MPH and standing on it up past the speed limit. We were discussing the difference in gearing, that his does over 80MPH in 1st. My 1st tops out around 50, this may be why i can out pull him in the lower speed range. I also do not know how hard he was pushing it or how good of a rider he is, I am a novice on sport bike (2 months) but have been racing cars for around 15 years.
I thought I remembered the rear sprocket was a +2, so I counted it 3 times thinking 45 was the stock gearing. This makes me question all of the other info listed on the site for all the gears. Anyways, back to work I go.

I've got 14/41 gearing so its just lower than stock 160mph @ 14K recorded on satnav top speed recall.
55 mpg is possible.
MPG will be more to do with carb setup and your riding style than gearing, you dont have to ride slow but you do need to keep your corner speed up.
I try to keep in top between 65&80 mph using very small amounts of throttle and very rarely breaking. My mate who taught me this style of riding gets mid to high 60's from his thundercat.
