Depends on you.
I love 600's for their light weight, good balance, high reving crazy HP. However I ride a 1000 because I love its also light weight (however very different feeling), good balance + High stability and Rediculous Power + Torque.
Of the 2 bikes I ride 06 1000rr and 07 ZX6R the zx6r is great for tight turns, downhill twisties and anything less than a 30mph curve. Not so quiet bit of vibrations @ different RPM's.
The 1000rr is great for town, touring, commuting, corners 25mph and above tight turns, long turns, 130mph wheelies and a top speed of 180 with a 200lb rider(experianced). Also VERY quite and vibration free.
If you dont have much experiance on a race inspired bike however the 1000 is a LOT of bike, 1/4 twist of throttle in 1st gear will have you looking at the clouds. 1/2 twist in 2nd will as well. The 600's are damn fast but are so smooth and long reving it never feels like you're going as fast.
I say find a couple people who have a 1000 and a 600 and test ride em. I went from a 600 to a 1000 and havent regretted it for a second but I still love the new 600 for those really tight twistie shorter rides.

Well, since you're an experienced rider, you'd be good on either one.
I have the 1000RR and I really like it a lot. Moved up from an F4i that I also really liked. I will say that I'd like to get another 600 in addition to the 1000. The 600's feel much more nimble in tight corners. The 1000 feels as though you have to force it more. The 1000 is still really agile and great cornering, but the 600 is better suited at it. I think part of the reason is the heavier weight and the slightly wider rear tire.
The 1000 has incredible power all over though. Down low, mid and up high in the revs. The 600's lack low and mid. 600's like to be high in rpm but the 1000 is happy anywhere.
With my 600 I was getting about 140 miles per tank, and it's the same for the 1000 with approx the same size tank because it doesn't need to work as hard to accomplish the same performance.
With extra power, the 1000 does have a more touchy throttle though, so throttle control is important. Also, anything more than 3/4 throttle in 1st or 2nd gear and the front starts to get light and lift. 5th or 6th gear roll on at highway speeds is incredible too for the liter.

The June 2007 issue of MotorCyclist Magazine compared the Duc 1098, Gixxer 1000, R1, ZX-6R, and the CBR 600RR. They tested the bikes on both the track and street. They listed the '07 CBR600RR the best of all of the bikes. They said "Few bikes we've tested have possessed such a perfect balance of outright competence and all-around accessibility as Honda's latest."
I own a 1000RR and I couldn't be happier. I mentioned the above for your information. I really think you will be happy on either bike.
