With modern engines I'm not 100% sure if the lack of back pressure would burn your valves. The problem with the older models is lack of back pressure would allow the bike to "breathe" better but some Einsteins didn't tweak the carbs to add more fuel. So it wasn't necessarily the lack of back pressure frying valves as much as the a/f ratio.
You FI should compensate for this extra air ... not saying it will but it should. If not you'd need a power commander or similar device to add fuel.
Having said all that ... are you nuts?!?! Running with no can will kill your low - mid range torque. It's not going affect the high end enough to justify the slow starts. Not to mention it'll sound stupid. Bad idea dude ... bad idea ...

but he doesn't care about the cops so my suggestion would be to sell the Honda pick up a Suzuki and rock on with no exhaust !!!
