I picked up an 04 Yamaha R6 last summer. It was a salvaged wreck with 1700 miles that I bought for around $3000. About $4000 in parts later I have a pretty sweet track bike. If you're mechanical this is a fun route to go. If you're not, check the bulletin boards on WERA.com and NESBA.com. There's always ready-to-go track bikes for sale.
