RE: Backpacks....
Having the weight of a leather jacket plus a full backpack is just too much, IMO, for touring. It's distracting enough for me to ride to school with one (I'm 35, I know, I'm late...). Maybe a textile jacket and a lightweight backpack...IDK. For me, it was more enjoyable to tour with just a pair of Chase Harper bags. I didn't feel like I was hiking while riding...

This is what i got and I haven't had any problems. http://www.kriega.com/pages_uk/r25/R25-topframeset.html It holds more then enough stuff and has built in reflective material. You can also buy add on packs to the front for easy access while on the bike. The main reason I went with this one is because I got tired of other packs pushing on the back of my helmet. I've puta laptop and two days worth of clothes in it without any problems. Aerostich carries them.

I used to ride with my Jansport backpack all the time but I got to carrying more stuff around and after awhile I didn't like carrying all that weight on my back. Plus it's kind of hard to get a backpack on/off wearing a vest & jacket so I bought a Cortech Sport Tailbag and couldn't be happier. It comes with a carrying strap and a raincover which works great.

RE: Backpacks....
I'm saving money for Ogio No-drag. I was originally planning on purchasing Alpinestars Aero backpack but for same price Ogio one is more functional and aerodynamic. It does cost 149.99 so if you really don't have need for specific riding pack, you should stick with regular ones. I really like that ogio no drag has zippers on the backside of the backpack and has huge room for all my gear for work. I carry alot of stuff for work so it will work perfect for me, also with my regular laptop backpack I already managed to lose my Oakleys and iPod from the damn zipper flapping open somehow.
