okay the problem is that you probably stepped on or pumped the rear brake lever will the wheel was off and thus caused them to be set farther in....
all you have to do is just push the pads back into the caliper....you can do it anyway you see fit, just don't chip away the pad....you MIGHT be able to do it with your hands enough to make it work, but i doubt....so just find a way to push the pads back into the caliper...put the wheel back on and pump the rear brake until it bites again...you should be fine

yeah that would probably be the best idea...unless you can finagle a way with a screwdriver or something to push them back in....i don't have pics of my bike right now to see if it could be done.....bottom line is you need to push the calipers back in, but you don't want to destroy either your pads or rotor in the process....i leave the method and discretion to you....
