Default Mature novice Rider

Looking for a bit of help
Have a street triple which I am not enjoying as much as I hoped bought it over the cbr 600rr
I have found a few low mileage rr's my question is at low speeds and under 7000 rpm how easy are they to ride as need to finalise deal in the morning my intention is to improve my riding with plenty of training just don't want to fall into a trap with my limited ability and a bike which I will struggle with or am I overplaying it

They are super easy to ride at low RPM as well as high. In fact, they are almost too easy! It's a pretty nimble bike...

If a 600rr is what you want, get it. The question you should be asking is will you be comfortable with the aggressive riding position at your "mature" age.

This "mature" rider (and you only have 6 years on me), wouldn't ride in any other position.

As far as the mature thing goes, Pphhffpptt!!!
I'm knocking on the door of 50 and love twisting my right wrist as much I did when i had my 1st mini bike at 11.

And there's the rub. OP said that he's a novice rider. Just like its tough for people who have never driven a car past age 25 it's tough for new motorcyclists at advanced age. Don't fool yourself.

It can be done, but don't expect it to come easy. You're past the point of youthful invincibility. Discipline will be your ally and like you said, investing in proper training. I got my liscense at 27 and bike at 31. I rode A LOT. And I studied the books A LOT. I nearly became a riding coach at CSS but I also knew I needed A LOT more work to make it happen.

just turned 40 and I LOVE my cbr600rr, wouldn't ride another bike. im also a novice with just a year under my belt of riding on the street
