The adjuster that is being mentioned will adjust idle speed as it relates to carb opening, not fuel. I found that when I adjusted mine upward, the bike would take quite a while to rev down to idle speed once I stopped. (if it went down at all some times) This caused harsh shifting in my case. I also found that there are idle adjustment screws on each carb IIRC that deal with setting the fuel each carb gets. These ports are what the mechanics should be using to adjust idle when you take the bike in for carb work.
Seems to me that if the bike only runs with choke on that it's a fuel issue that needs to be taken care of. The speed adjustment may keep the bike running, but if it's running too lean, you need to get that taken care of.
Will the bike run when you are giving it throttle, but have the choke off? ie, when going down the street, can you take the choke off and the bike will continue to run?
