What I would suggest doing is go get a compression tester. its basically a pressure gauge with threads for a sparkplug. Check out all your cylinders and see if any are low.
If you do indeed have a blown head gasket, its possible that the water could jsut be entering the combustion chamber, and NOT mix with the oil. You would deffinatly notice a drop in the coolant levels however. I would also think you would notice some air entering to coolant though. When you take the rad cap off, does the coolant bubble? I would mark where the coolant is, then check it again later and see if its lower. The coolant will be higher when its hot vs cold though, so be aware of that.
White smoke does mean that water is being combusted. The trick is to find out why.
BE WARNED!! A blown headgasket isnt too bad to fix, and can cause more problems if you leave it go!
