Both are reinforcement material over the true fluid carrying hose. Their job is to restrict swelling of the hose when you apply pressureto the brake lever. This swelling effect can become pretty bad in a rubber hose as the brake system gets hotter during hard use.
Because of this improved resistance to swelling, more of the effort you put into the brake handle translates into stopping force....improved brake feel.
Kevlar stretches less for a given amount of pressure than stainless braiding....so you couldsay its "better".
Stainless lines are very good too....I like the black vinyl coated stainless line better than the ones inside a clear vinyl tube. The clear vinyl yellows and is stiffer and bulkier.
I've had both, but never on the same bike....so can't give a fair comparison. Nor can I say my abilities are good enough to even give then such a comparison.
