Default Overheating- fan ?

I posted a few weeks ago about the temp riseing pretty high. Everyone said it was normal but it wasnt until I was on the way down the shore when it got really hot, 249-250. I pulled over and checked fluids and cooland and all was good. My fan was never kicking on. Yes i checked wires and fuses.theyre all good. Any suggestions? I heard theres a way to ground out wire and put a switch in for fan. How can I tell if the fan is bad or the thermostat is w.o getting rapped by the dealer?? Ideas?

Wire the fan directly to a 12V source.

Default fan

Ok not to sound like an idiot but what wire. Ther wire goes to a harness to under the seat to pass along the fuse box. Which wire are you talking about? Kind of looking for a step by step or pics...if possible.
