Manual Fan Control?
Depending on how the internals of the switch are, i might be wrong with how i put the switch. It looks like a 3 pin switch.

So top to bottom(or may have to reverse it depending where the LED is:
1. GND
2. Output to pin 85
3. Input 12v+ from ignition
Again, i suck at explaining things, i make mistakes..but this should work with the components you got there.

What i came across is that the sensor, once it heats up to 230'F, grounds. The plug that connects to the sensor just needs to be grounded in order for the fan to turn on. I take the +12V from the fan connector, which is only +12 when ignition is turned on, and attach that to my switch LOAD.
I will also set it up the way you suggested as well, couldn't hurt
