replacing mine took roughly 2 hours, but i also do this for a living
the reason most shops will quote 3 hours is they remove your valve cover to they can set the deflection in your chain to ensure proper tension
a few guys on here have tightened theirs by hand then cranked their bike and turned it until the rattling went away and tightened it down
which may work for some, but if they don't tighten it enough the chain slack can cause their cams to jump time and really screw up their motor
