Default Fan Sensor

I think I have a bad ECT Sensor (one located near thermostat, under tank) cause my temp gauge is just displaying the two dashes (--) even after riding, but my question is, does another sensor control when the fan goes on?

I would wait to see if the fan comes on but i cant tell how hot the bike is so I dont want it to overheat in case this sensor controls the fan too.

yep - the fan is controlled by a sensor on the left side of the radiator - should be between the two hoses, and has a electrical lead attached to it.
