I'm not a expert on this but I think its when you scuff the tire all the way to where the sidewall begins when cornering..

Chicken stips is the unscuffed part of the tire on the tread side. Gives you an idea how far you are leaning into your turns.

The chicken strip is the unused part on the outside edges of your tire. The wider the strip, the less lean angle you've been using while riding. If you just drove in a straight line, you would have very wide chicken strips.

Some also think it's an indication of how good a rider you are. Maybe, but no not necessarily true. Riders that use their body to change COG on their bikes when cornering may be able to get through corners faster than somone who stays in the middle of his seat and leans the bike further over.

My friends call them "***** strips". lol They make fun of me because mine are the biggest but then I just make fun right back because their bikes are all messed up from crashing doing stupid things. HAHA Ill take my ***** strips and nice mint looking bike over dented gas tanks and scratched up all over anyday.

Depends a lot on tire profile too. I had Michelin Pilots and no strip whatsoever--it was worn right up to the edge. The Dunlops I have now have a much rounder profile and I have yet to make it to the edge...
