I would probably recommend the stock stacks.
A. It's probably the best trade-off between low end torque and top end horsepower.
B. Do they even make aftermarket velocity stacks for the 919 motor?
It also depends on what your looking to do with the bike. Shorter stacks for better top end and a longer stack for more power down low. Simply for the fact of "tricking your ride" I would just leave them alone and lie to people about them being aftermarket.

Riders of other bikes always offer mixed reviews of velocity stacks, with the majority consensus being that they're worthless. Best case scenario is a gain of a horsepower or two.
If you want to make some power, get a full system, cut the gearing a bit (-1 in front, +2 in back for example), and throw some cams in. That should be decent for starters. And those will make noticeable differences.
