I live in Vegas, where it normally gets over 100. When I'm crazy enough to ride in the daytime, my bike runs 190. But, if I sit at a light for like a minute, it'll hit 221 when the fan kicks on. I run 100% Engine Ice coolant, but I didn't notice my bike running much cooler after switching.

Unless the bike is idling, the temp. shouldn't go up from its normal range, which can be varies for each bike; because it depends on the engine speed, weather, coolant, engine oil and howefficent is the radiator as well. I believe it should varies from 180 to 200.
For myself, which using a analog meter, I don't mind as long as it didn't touch the red line. Normal temp. will be slightly almost to middle line and during idling it will rise slightly higher than that.
