Default Changing Sprockets/Gears

Ok so im kinda lost on this subject. I know -2+1 will make your bike wheelie a lot easier but at the sacrafice of top speed, but in what other cases would you change them? and what would you change them to? for example: what would +2-1 do to our bike? or any other kinda of combo? any help is appreciated!

up in the front - more top speed
down in the back - more top speed
down in the front - more accel
up in the rear - more accel

if you dont do the right combo youll end up with near the same gear ratio as you started. which didnt really get u anywhere.
