Best tire with the least amount of rim overhang

I'm doing a car wheel conversion on my SSSA. I discovered the other night that a 7" rim running a 200 tire will be close to 8" wide! OUCH, i definitely don't have room for that. 7" already is putting me slightly offset.
So I'm looking into options that will give me rubber with very little rim overhang or i have to go to a 6 - 6.5" rim.
Dunlop has a 200/50ZR17 for 7" rims, but full size is 7.82". To get it to a more manageable size, i need to go down to a 180/55ZR17 (7.46") on a 6" rim. At that point, it will be hard to find decent rims. But i should have known that... prior too.
Looking for advice on a tire with small sidewall, help please!
