What setting (1-10) do you set the back shock. Its a little stiff for me and i weigh 135. Is up the # softer, or down the number? thanks

Compression damping is lower numbers equal softer.......try turning down the pre load (the adjuster right above the spring) and maybe reducing rebound (if it's adjustable for that). You might also be feeling a "harsh" ride from the front too. If it's too stiff it may FEEL like the rear so soften that up a touch too.

Is there a way to raise the overall ride height of the rear end?

Either increase the pre load (although that is not the right way to do it) OR shim it with washers between the shock body and the subframe.(where they attach at the top) OR you could drop the forks a little in the triples, but be careful to watch for clearance with the front tire and the radiator. 5-6 mm is about all I would go in the front to begin with. You might be able to get away with 10mm, but again......it depends on clearance.

Mine has been set on 2 which is the factory standard setting which was a bit soft for me (I weigh about 185lbs) So I have stiffened mine up to 4 which gives me more confidence in the bends.
