What happens if you put 5 quarts in the motor?

 

Blow seals out and other unpleasentries.

 

bottom of the crank is dipping into the oil and churning it into a froth. Also causing weird heat/cooling situation for the con-rod bearings.

If it is fresh oil - get a clean catch pan, drain it all out, then put the correct amount back in.
