I'm kind of the new guy around here, but my two cents are as follows -
I've had a few buddies pick up 250s as a starter bike, and about 2-3 months of riding they're looking for something bigger and better. To step down from a 600 to a 250, you'll loose a lot of the right out of the throttle snap, but the bike is easier to through around (not that the 600s I've ridden were ever difficult).
Personally, I don't like how small and lightweight the 250s are. Best thing to do is swing by and get a feel for it.
